I was kidding when I told the folks I was thinking of adding zucchini to the oatmeal. But I did it anyway.
Zucchini Oatmeal for Breakfast
Serves 2
1 cup regular rolled oats
2 cups milk
~ 2/3 cup grated zucchini. Maybe, I didn't really measure it.
1 handful raisins. More or less. The more the merrier.
1/2 tsp cinnamon. More if you like.
1 tsp brown sugar or the sweetener of your choice (optional)
Throw everything into a pot and cook for at least 5 minutes. Cook longer if you want it thicker. You can also cut back a little on the milk if your zucchini is really moist. The more cinnamon and raisins you use, the less obvious the zucchini will be. They said NOTHING to me about zucchini in the oatmeal. Success!
