I saw this design trick on Canva (the see-through font to show what's behind the letters), and now have a place I want to try it on a poster we're building. I'm pretty savvy with Pages, so doubtful it can be accomplished there. Any other ideas?

At some point you would have to use a flood tool (paint bucket) and I don't see one in Pages. I'd probably do the whole thing in basic Photoshop-type tool like Pixelmator, where this would be pretty straightforward, assuming the lines on the background image are sharp for easy edge detection for your flood tool.

OK--In Pages, I did the text as an outline.
Duplicated it and made the text solid white.
I made a solid rectangle the same color as the background (I didn't have time to do the same gradiant)
I then did iInstant Alpha to eliminate the blue back ground

Here is the order of layers-Top to bottom.
Top
Outline Text
Image of model only-with Insta Alpha applied
Solid White Text
Blue background rectangle
Back

Yep, as Ken said, quite possible in Pages just using layers and text outline.
