I had a cat just like that who aacted just like that. The solution was to leave his belly alone and just pet him elsewhere, which he toleranted. It spoiled his fun, but oh, well!

My crazy orange tabby cat would spawl out exposing his belly as much as possible and you at me like, 'don't you wanna rub my belly?' - and I did want to, but every time I tried, his pleasant relaxed posture would IMMEDIATELY switch to 'I AM GOING TO FRICKEN MURDER YOU!!!! I'd warn people not to do it, but they just wouldn't believe me.

Our two males LOVE to have their bellies rubbed. If the older one is laying on his side and you put your hand anywhere close to his belly, he’ll immediately roll over to get a belly rub. The older female tolerates if you rub her belly for a second or two, then will roll to a position where you can’t rub it. The younger female will jump up and run if you try to touch her belly.
