Pre-cooked bacon - use by 2/23/23

Found in the back of the fridge - unopened box - vacuum sealed inside.

If it smells OK and has no fuzz, I'd say go for it. Bacon is pretty well preserved.

There's likely so much preservatives in that package it won't even make a difference.

Indeed; I was expecting this to be one of the old "I found this frozen meat in the back of the chest freezer; says 02 on it and I don't know if that means February or 2002; is it safe to eat? I'm going to cook it and eat it regardless."

Was it still under vacuum, or was there a gas around the bacon? No gas, good to eat. Gas around it (package is somewhat "puffy") toss it as there is something growing.

As others have stated, there is enough preservatives in there that a few months expiration date is just a suggestion. As long as there has been no outgassing, it is most likely good (although the taste may be off).

But, I hold my final decision until Paul F. weighs in!

I've bought pre-cooked bacon from Costco a few times.

I hate, hate, HATE, 99% of the re-sealable bags as they often pop open in my case, exposed the precious bacon to the scores of spore from other science projects.

So I eat a few pieces, re-seal and recheck 27 times, and put it back.

Odds are 50/50 that I'll find it open the next time I need it.

The next time I buy it, I'll put pieces in multiple freezer bags and dole them out qd/qds/prn.

One question though: What makes this bacon pre-cooked when it doesn't look cooked at all?
