Speaking of pork sausage links...

I've always liked the Jimmy Dean's Original Pork Sausage Links category links, with the aforementioned brand being my favorite.

So when in Safeway, I decided to try some Italian Porks Sausage, five to a pack, so I could make sandwiches of them.

I tried two different brands and they were nothing like the preferred breakfast links.

They both had an odd tasted, some seasoning that had a faint mint or even licorice type taste.

One was worse than the other, but both were disappointing.

Other that rolling four of the little JDO's into a slice of bread, is there any four- or five-pack of links that fit that taste category?

Costco has the JD brand in quantity, but they're turkey based links, and a poor second to pork.

The licorice taste is probably fennel seed.

Thank you!

That's it, and I was racking my brain trying to remember what that taste was.

I don't like it, for the record.

Counsel will stipulate.

That could be a whole different taste than those sausages.

Premios are pretty good for supermarket.
CostCo also carries their chicken version at times.
But the real deal comes from an Italian pork store and they make 'em with fennel. Coz that's Italian.

You may want to look for Farmer John, Nimans or Aidells breakfast sausage. Or Andouille. Or Spanish chorizo. Yummy good.
I agree, sausage is pork.

You could also DIY with some quality ground bulk pork sausage meat and seasoning and an ice cube tray. Plenty recipes to be found.

mmmmm, now I have a hankering for sausage and peppers & onions w/parm and a little red sauce on a ciabatta.
With an Otter Creek Stove Pipe Porter.

But why would breakfast sausage taste like Italian sausage at all? They are two different things that happen to be sausage shape.

Exactly. Main seasonings for US breakfast sausage are sage and black pepper. The US version of "Italian" sausage is seasoned with fennel or anise as a main seasoning, with sweet basil for sweet Italian sausage and red pepper flakes for the hot version.

Personally I find Jimmy Dean sausage mediocre. Plenty of other brands that are better, usually regional brands or stores that make up their own fresh breakfast sausage mix.

I despise fennel. My dad made Italian sausage and used fennel. Could not stand it.

Ah yes, Johnsonville. The company that took generic sausage recipe ideas from German/Austrian bratwurst and created "brats". A pale imitation of the originals.

there is a restaurant near me that supposedly makes great bratwurst (it's a German themed place) and I'm planning to try it for upcoming Oktoberfest.

Baby steps.

Johnsonville has a wide variety of flavors, and lists the ingredients for each on the website.

And they are widely available.

IMO brats are the superior sausage - even the Johnsonville variety
