looks like an Olympic contender to me.

But can it be played with electric bikes? Or Should it?

That sport is called bicycle polo and was first played in Ireland in 1891, with an introduction as an Olympic demonstration sport in 1908. It's actually a fairly popular sport in many countries. My guess is that it has more participants than pickleball, despite pickleball's recent success in the US.
