Why does Apple think 128GB or even 256GB is a lot of space? Same could be said about 8GB RAM?

256K should be enough for anyone.

It was years before my wife filled up a 64GB phone, and I can't remember if we got a 128GB or 256GB as the replacement, but either one will be fine for years as well.
Heck, I'm only using 111GB on my phone, but I use 7TB on my computer.
So, for the average consumer, 128GB and 256GB/8GB are probably fine. I know for my wife, both of those are totally fine.
And you don't have to buy those options, you can get more storage and RAM. It's not like Apple is saying one size fits all!
Of course, Apple charges an arm and a leg for upgrades, so I wish they'd cut those upgrade prices in half (or more!). That would make it a lot more reasonable and still leave a decent mark-up for Apple. There's no way I'm buying an 8TB computer from Apple new, so I had to wait until I could get decent deals on a used one.

It’s a takeoff on Bill Gates “640Kb should be enough for anybody” quote on the amount of RAM needed in a PC.

Jerry,
Bad comparison. You can't compare the storage necessary for a phone to the storage necessary for a computer. This is especially true if you regularly off-load from your phone photos and videos and keep a limited amount of music and videos (for watching) on the phone itself. Factor in streaming for music and video and a phone or tablet with 128GB to 256GB of storage is actually fine for the vast majority of people.
128GB to 256GB (or even 512GB) can be woefully inadequate for a computer be it a Mac, windows or Linux box. It all depends. My base minimum for a computer is 1TB of storage. Wouldn't purchase a machine with less storage than that for my office and I want a 2TB for my personal setup.

I have 68G of music on my 'Phone.
Apple Music is only used at home on WiFi.
I don't know anyone who carries that much music on their phone.
