I just snagged a refurb 16/512 M2 Mini. I guess I have 15 days to get buyers remorse, but I think I'll be fine. There's still at least one listed if anyone's interested.

Good deal at $849

But I am shocked that you have to really pay a lot to get 16GB RAM for a Mac mini these days. Seriously, Apple, some of us do not need the pro chip but CAN use 16GB RAM

And more ports. The base config is pretty limited.
