Lunch Ideas For 72 Year Old diabetic friend

My 72 year old buddy is still struggling with his diabetes

He's on insulin metformin jardiance and bunch of other stuff. He can still bang a 300-400 on his pocket monitor if he eats the wrong stuff.

I'm going to try and bring him lunch and make him eat it.

Mission Tortilla carb balance
two slices low sodium ham from boars head
Slice of some kind of cheese
Mayo?
Two leafs of kale

Any suggestions?

A big greek salad with lots of cucumber, vinegar, olive oil, olives, feta cheese, and tomato. I know a place in San Pedro if you are local..Avoid things with refined sugar, bread.

Mission low-carb tortillas are okay, but you need to ignore their "net carbs" claims and look at the carbs on the nutrition label. At 19grams of carbs in their small tortillas, just one can drive up glucose significantly, and they're not very filling.

Steak or chicken cut into a salad would be nice, with a choice of low-sugar dressings.

No bread.

He could get away with a small slice or sandwich every once in awhile if he was peaking in the 230s, but 300-400 is VERY advanced. Surprised his doctor doesn't have him on insulin instead of Metformin.

Maybe find a restaurant that serves burgers wrapped in lettuce instead of using a bun...? 5 Guys and Red Robin will do that.

Or see if you can find a zero-carb tortilla and go back to the wrap idea. (They aren't actually zero carb, but usually have fewer carbs than otherwise and use added fiber to balance them out. Fiber can help to moderate blood sugar.)

Salads and protein work for me. Mrs cbelt3 and I have “farm lunches”… fresh vegetables, cured or smoked meats, maybe a little fresh bread or crackers

Local supermarket near me has chicken drumsticks for $0.68/lb this week. (Thighs were on sale last week.)
Sprinkle with McCormick Grill Mates Montreal Chicken Seasoning. Grill. Done.

Zero carb. Zero sugar.

With some vegetable added, this is a week's worth of food.

That’s way too much lettuce - one leaf on top and one on the bottom is fine. Cracker Barrel has a 1/2 pound hamburger steak (no bun) with two sides for $10.99

I never cared much for the idea of 'wraps', but that does look inviting.

And is solves the problem of excess cheese ending up on the paper wrapper.

TBT, I do like leaves of iceberg lettuce.

It gives a satisfying crunch to a sandwich, the polar opposite of shredded stuff, for me.
