Make it a themed meal with Carrot Soup, Morrocan Carrot Salad, Oxtails with braised carrots, and Carrot Cake, you can even toss in a Carrot-Whiskey Cocktail

I hate the taste of carrots on their own, but I do like carrot cake.

Rather than going with carrot cake, this recipe for carrot pie sounds intriguing, and using a frozen pie shell would probably be easier to make-

I make it sometimes, stuffing the measuring cup as full as I can with grated carrot. It’s dense and moist… now I want some carrot cake.

Can't go wrong with carrot cake. Ever.

I used to love chomping on raw carrots, and I tolerate cut up carrots in soup or stews. But lately have come to very much enjoy roasted sliced carrots. Just peel (or not), then slice diagonally in about 1/4" pieces, toss with some oil, salt and pepper (and whatever other seasoning you like), then spread on a baking sheet and roast for 15-20 minutes at about 400 degrees F. Yum.

I make my late mother in laws soup.

“Go through the garden twice, cut up the vegetables, and cook it for a day”. With chicken broth, over rice with sour cream and an egg. My kids call it “super soup”.
