Any reason not to run dual VGA's off of an Intel Mini?

I've got a 20" 2.0ghz G5 iMac and a newly acquired 1.66 Intel Mini. I do lots of video and dvd work (FCP and DVDSP) with Adobe CS and AfterEffects mixed in. All of my work is done over the gigabit network and nothing is pulled off of the internal hard drive. But, my workspace is spread across two monitors. Can the measly video support in the Minis handle this? I would upgrade it to 2gb of ram.

I hadn't thought once about mirroring vs. spanning. I was looking at this cable: [cgi.ebay.com]

I'm using the screen spanning patch/hack (that came out years ago) in order to extend the desktop onto my 2nd monitor. I wonder if it will work on the Mini...

I just loaded FCE 3.5 onto a Core Duo mini 1.83/1gig/80 refurb and got the message that the installed video card does not support FCE 3.5.
