poll : breakfast eggs

if you're having scrambled or an omelette, do you use:
non-stick
cast iron
aluminum or other "clad" type
glass

GREAT TOPIC....

My wife bought these calphalon(sp?) pans. They are not NON-STICK they are SUPER DUPER EXTRA STICKY.

Eggs cook like CONCRETE on them. They are IMPOSSIBLE to clean.

I hate them SO MUCH!!!! I would rather cook on a hot sidewalk covered in spit.

For eggs, nonstick is really the best way to go. Well seasoned cast iron will work too, but not nearly as well for the 2nd or 3rd round of eggs if you are also cooking for others, and not as well if you cook other stuff in the pan first, like onions and peppers, before the eggs.

the pan doesn't matter, aside from the amount of heat it holds -

HERE IS THE SECRET

let food warm to room temperature before putting it in the pan.

I let eggs sit in some warm water before cooking. they never stick.

How do you think people cooked before teflon?

But since I fry 'em in bacon grease, they don't stick much anyway.

My eggs come straight from the hen. Never go in a fridge.
I've cooked eggs on cast iron on gas.
No way does teflon on an electric range come close to cast iron on gas. Period.

Anyone who claims the same results has no taste buds.


Who cares if they stick when they taste and look like crap.?

Cast iron. I have two iron pans I can use for eggs and it takes some effort to get anything to stick to them. If something does stick, a short water soak loosens it easily.

Scrambled, by the way.

All-Clad Master-Chef. I don't use non-stick. Use enough butter and make sure the pan is hot and well seasoned.

You don't post a link, so there is no way to tell which pans she bought or what they are made off. Non nonstick pans are supposed to stick. That is point, and that would be the reason you would use pans like for any kind of cooking in which you want that: searing meats, sauteing, pan frying. The "stick" is what creates the seared surface of the food, and what is left and stuck on your pan is called the "fond" and is used to make the sauce.

It's too bad I no longer fry my eggs in bacon grease nor use lard for my pie crust. I really miss the days before we'd heard about cholesterol. sad smiley

I use an enamel coated cast iron skillet for most of my cooking, including eggs. There are a few things I do in non-stick skillets, but that's more because I need a size that I don't have in the Le Creuset.

I actually wasn't asking for taste or ease of in the question.
don't laugh.
non-stick and aluminum chemicals verses cast iron and glass in the bloodstream.
I got paranoid after reading a recent article on the level on "non-stick" in Americans blood.

I use All-Clad LTD. I have both stick & non-stick. You need some kind of lube in either to prevent sticking, although you may be able to salvage in the non-stick if you forget.

Cast iron, usually. Though I do have a smaller (8-inch, I think) steel pan that is very well seasoned from crepe making, it works very well for omelettes.

I don't own a non-stick/teflon pan. Cast iron is great. And yeah, you might pick up a little extra iron in your diet because of it, I hear.

Try your microwave for scambled. Just put the beaten eggs in a cup. Watch through the window when they rise enough you are done.

Well seasoned cast iron pan for frying eggs. Never had a problem with second or third batches, but I use enough fat to fry them in and keep them from sticking. It does not take that much.

Fritz, you are probably wearing off the finish with whatever scraping you're having to do to get the food unstuck. At least with an iron skillet, you are getting some extra essential mineral in your diet from the leaching, instead of dietary Teflon. Like pipiens, I use the microwave and a ceramic bowl for my scrambling - the eggs are fluffy and dry, if a little rubbery.
