oh no, the beef stew is too spicy!

25+ family get together sunday afternoon at 2pm

spent the day baking desserts: apple pie, lemon cake, brownies.

main course: grilled salmon and beef stew

side dishes: ratatouille, kasha, grilled asparagus, citrus salad,

appetizers: homemade potatoe pancakes and homemade applesauce.

made the desserts, beef stew, ratatouille, and applesauce today.

just tasted the beef stew, a version of a southerwestern stew whith green chilies, chick peas, sundried tomatoes and zucchinis spiced with black pepper, red pepper and cumin.

i made it too spicy! not blazing, uneatable spicy but pretty darn hot. i already tried diluting with additional beef stock but to no avail.

jeez, a very nice dish wasted by my heavy hand.

anyone with a quick antidote?

Don't even try to save the stew. No one will like the result.

Suggest its a special recipie for sophisticated tastes; one served in tiny portions and best avoided by most.

Watch the result.

Add Habanero in qty. People's taste buds will be nuked and pain will overcome all taste concerns.

Save it and pour over french bread for lunch.

Try addiing frozen or canned corn or
try cutting a lemon into fourths and drop them in a while.

One other potential solution is to cook the stew down and freeze part of it and then add stock and some regular stuff you want into the half you don't freeze.

Sorry this is too late to help your meal, but next time try adding either sour cream or whole milk yogurt. Stew should still have a good flavor (though richer, especially if you opt for sour cream) but the hot spices will be cooled.

Ditto on the sour cream - it's really good at helping that kind of problem. Also adds a richness to the stew - you can do the same with chili for wimps.

(I'm not one to do that to stew or chili - come on, my chili recipe uses 4 tablespoons of chili powder, some cayenne, and 6 whole jalapenos! :>) )

btfc and others-

the family is gone. the clean-up finished. i've been on my feet all day. family get together went real well and...

...everyone loved the spicy stew...

especially after i listened to the above advice and put in 1/8 cup of brown sugar. just took the edge of the real hot without ruining the taste or the spice.

when asked for the recipe i re-told how i thought i blew the dish but was saved by the good folks of macresource.

just want to thank all. and by the way, if u are in my neck of the woods i do have some tasty leftovers!
