So I bought some new bacon today...Hormel Uncured. Its quite tasty.

I'm typing this while eating someoo "Hot & Spicy Peanuts" from Whole Foods. They're "Flavor Tree" brand.

They are, indeed, hot and spicy!

Isn't uncured bacon just "pork"? Is it like the difference between a smoked shoulder (tastes like ham) and a fresh pork picnic shoulder (tastes like roast pork)? Never had uncured bacon...

I guess its more natural...I threw the packaging out. I'll have to get more to explain it. I like the "streaky bacon" as the brits call it.

Uncured means that the bacon hasn't been cured in the traditional way using sodium nitrate or sodium nitrite to preserve the pork and keep it pink or red. Instead, the uncured versions generally use salt, lactic acid starter culture and celery juice, which is loaded with natural sodium nitrate, to create the distinctive bacon flavor.

Non-nitrite.

SF Comical had a taste test won by Trader Joe's for this stuff.

that means they didn't cure the pig of parasites or the multi-modal cancer it had... so they
thought they'd just sell it for mechanical separation.

Think the stuff on the side is mouth watering sauerkraut. Slop it on top, add mayo, ketchup, jalapenos and a big pickle and you be living large.
