The 12" MB is a compromise form factor/system for sure. If Apple were to put an M-series chip in it, could be quite useful (under 2 lbs total). But not for your uses - for travelers. The i7 MBA machines are terrific. My son is using his daily from 2014. We updated the SSD and had to do the hard part of replacing the keyboard (and on its third battery, but that's easy to swap). I've been using tobenone usb-c docking stations for years. They have a number on Amazon. I like their models with DisplayLink to enable dual external monitor support on all Apple Silicon Macs. But that does add some cost. This model seems to check all your boxes. Runs under $150

If the Intel Mac has an ssd, and it can run any of the Mac OS patches, it’ll still be good for several more years. I’m running Monterey on an original i3 iMac from 2010. Quite usable for regular office and web apps.

Delta was okay, though I thought we were going to overshoot the runway the last time we flew with them. Granted, these were all several years ago, so I'm sure much has changed. Google flights seems to be a convenient way to compare. FWI

First gen epic fail was no hardware escape key for programmers. Second failure was putting this with the terrible butterfly keyboards. Third was not taking workflow issues seriously. I concur that I bet all they would need is the 24GB M2 mini and a USBC dock. Even an expensive USBC dock that has features like DisplayLink (enabling adding a third external monitor) runs less than a TB4 dock. My experience is that everyone is calibrating on the Intel models. I suspect that an M1 mini with 16GB RAM would likely also address any needs.
