It's not unusual to have a little mold on maple syrup. when it's not fridged. Booting from externals seems to work just fine on Intel Macs -- including booting to Big Sur -- with one exception. I've had some issues with Catalina boot vols on 2012 iMacs that seems to be related to a firmware problem. They sometimes don't see the APFS Catalina boot vol on a restart. The micro-suction thing will probably do a decent job. I keep one of those dashboard anti-slip pads under my regular iPhone cradle for the same reason, the whole thing lifts up when I try to lift my phone off of the charger.
