Looks like a first step will be to take the Food Protection Course certification. Then you need a pre-inspection before "opening for business" . . . If I were you I'd just consider staying under the radar for as long as possible, but the certification may help you if there is an inquiry into the source of your client's baked goods. My G3 iBook is also fussy about starting.. It won't accept the password to wake from sleep when the lid has been closed, but it will when it's gone to sleep with the lid open. On login the keys "stick" often and it's a PITA to get the password in. This has persisted across OS upgrades (at 10.4.11 now). I dunno, seems like the opposite could be true too-- if you have less space, it's harder to get to the stuff you'd like to get rid of, because there are more layers to excavate to get to it . . .
