I'm using HomeAssissant with HomeKit although HomeKit is really only providing CarPlay garage door support (which I really like) I'm using a raspberry pi with Home Assistant OS which I've been pretty happy with and found easy to use. When the internet is slow, are you able to connect to other network devices and transfer files quickly? Oh, this is exactly the sort of thing sous vide is for - cook at a low temp in a water bath for a long time and then throw it in the oven at the end to put a bit of a sear on it.
