Sounds familiar. I take a travel power strip that has the chargers permanently on it so no charger gets left behind.
The current overseas trip we are on, we really minimized:
4 iPhones
2 cameras: dslr, Sony nex
iPad mini
Kindle
Weird to travel without a laptop to dump photos onto, but the many SD cards should hold up.

So while I used Plex a few years back on a Mac Mini (as well as XBMC on an ATV2), I also found both to by very unfriendly. My wife would never navigate either interface.
While this Plex connect provides a jailbreak free solution, it still requires Plex Media Server which needed a lot of manual massaging to get Files correctly categorized.

You can't sync iCloud data between iCloud accounts.
However you can have Apps & Media from multiple iTunes accounts on a single iOS device.
We use a single iMac, under a single login to sync all our apps & media. Everyone physically connects their device and updates what they want synced.

If so, from a maintenance perspective, I'd recommend the $250 Samsung Chromebook. Essentially zero maintenance and will run Google Docs for Word Processing & web apps.

Option click on your Wi-Fi menu bar icon and see if you're actually connecting at N speeds and what your transmit rate is.
N speeds vary greatly and don't have very good range. Best to hardwire if possible, especially for 1080p video.

May I suggest an alternative approach that may be quicker and lead to less frustration?
IF, and only if, you don't plan to edit these files, then I would recommend avoiding iMovie altogether, and buying the following - El Gato Video Capture:
Connect this between your camcorder and iMac. Pop in a 120 min tape, hit record on the iMac software, and 2 hours later you've got a ~ 1 GB H.264, MP4

Chose Wire xfer ~ $30 in fees combined on both ends. But wanted to move the funds same day without having the 7 day check hold my bank would have placed.

Both the AT&T and VZ iPad 4 and Mini work fine with "GSM" cellular networks for 3G coverage. You'll be fine with either one.
The difference is which LTE bands are covered in which countries. If you don't care about LTE coverage/speeds, then don't worry about it.
A1459 is AT&T and A1460 is the Verizon.

Is there any particular reason you are re-encoding MKV files to m4v?
Can you use iVI or several other apps to repackage the h.264 encoded video into the m4v wrapper?
