Supposedly, the "limit" of age difference is if the younger partner is half the older partners age plus seven years (with the caveat that the younger partner has to be of legal age). Hmmm... What % acetic acid is your vinegar? Most recipes, unless they are fairly old, assume a 5% Acetic Acid, which is pretty standard now... but, there are a few vinegars that are 6,7, or even 10% acetic acid - which will alter the acidity of the brine.by Paul F. - Tips and Deals
What was your vinegar/water ratio? I haven't made whole pickles, but I've pickled a lot of things, and much more than 50/50 gets too acidic for my tastes. Adding sugar doesn't cut acidity, it just masks it... to a point. I wouldn't go TOO much less vinegar than 50%, or the acidity won't be high enough to kill little nasties like botulism.... Once the peppercorn is cracked (and ground), the aromatic compounds that make it tasty evaporate within a few days. Pre-ground pepper has no flavor. I respect that you don't want a pepper-mill or have to fool with filling it with peppercorns, but, you won't find any pre-ground with any more or different flavor than you already have -because it doesn't have any "oomph" left.
