I've been roasting about 6 years. Use a Hottop programmable. Most of my beans have come from Sweet Marias, but I do belong to a few green bean coops and have made some large volume purchases from them. I mostly roast for espresso, so don't do large volumes, maybe about a pound a week. It's a lot cheaper than buying from my local roaster and I get better quality too. The winner of their test is the Taylor Wireless Thermometer with Remote Pager Plus Timer. Second up is the Maverick Redi-Chek Dual Probe Remote Thermometer. Not recommended was the CDN Wireless Probe Thermometer and Timer. I can vouch for the Maverick. You can eat the inner shell, but it can be a little chewy, especially with older beans. The nice part about grilling them is that the high heat seems to cause the shells to separate from the beans a little better.by earache - Tips and Deals
"Do you double peel them?" If the beans are young enough they'll pop out of both inner & outer shells. If they're older beans, then you may need to bite the end off the inner shell and squeeze the bean into your mouth. Be sure to lick the salt and pepper off your fingers while you eat. Mix them with some olive oil, salt & pepper, then grill for 6-8min over high heat. Then just pop the beans out with your fingers. That's the best way I know how to peel fava beans. Chianti does indeed compliment them well.by earache - Tips and Deals

My 13yo choc. lab/kelpie, Dawson, was just diagnosed with a heart condition and is now on meds (Lasix and Enalapril). Amazing what drugs can do. He's a completely different dog than he was even a year ago. Happy and full of energy. I ordered a 32 WiFi first thing this morning and was dismayed to find out it wouldn't ship until next week. All day I resisted the urge to drive to my local Apple store and wait in line. Ok, so the new iPad supports both ATT and Verizon networks. This is great because a friend of mine lives out in the sticks and doesn't have any broadband access. She just wants to do email and some surfing so we're hoping 3G will work fairly well. Sync'd from address book. All the addresses came over, but absolutely no groups migrated. With 5 Macs to sync, I'm finally trying to cut loose from MobileMe and finding that it's not as easy as I had hoped. Cleaning the garage today and came across my old IIe system, complete with 2 floppy drives, RGB monitor, Kensington System Saver, ECHO speech synth, joystick, Senior PROM, Itoh Prowriter printer, many issues of Hardcore Computerist and tons of floppys filled with who knows what.
